This place is great for a fine dining meal that your wallet & tastebuds will thank you for. You would never guess you were dining at a culinary school. The ambiance is wonderful, the service is friendly. The drinks are great & the food is fabulous!

Blue Hat Bakery & Bistro at Pacific Institute of Culinary Arts
Stopped here for coffee on the patio over looking the marina. It’s located at the mouth of Granville island. Lots of indoor (covered in case it rains) and outdoor seating. Espresso drinks are all reasonably priced and made with LavAzza beans (Americano $3) . They have a variety of pastries, sandwiches and juices available.

We tried them out during Dine Out Vancouver 2020, and we were very impressed. Our server was very attentive, patient, and funny. He made sure we had a great time. And the food? Excellent, right from the plating down to the dessert's smallest morsel. Highly recommended.

Good presentation, flavours could have been a bit more interesting. Braised short ribs, a bit dry, lacked flavour, as if they were not accompanied by enough red wine, seasoning and mirepoix in the oven. Very good choux for dessert. Not outstanding as in past visits. Good service. As always a great selection of breads, and also always worth trying their latest menu.

The food was very good. Large seating area and outdoor patio. When dining in I would prefer that they take the food to your table rather than yelling out your order, I can understand if getting a coffee to go. Clean ...but I did not see any wiping down tables between customers. Staff were friendly. $$

Impressive culinary delights, as always. I love that you get to try experimental creations from PICA. The manager is a sommelier, so he noted the best pairings from our BC White Wine Flight with each course.The restaurant is usually only open on weekdays during select times. It's no wonder Bistro 101 books up quickly! (Dine Out Vancouver seems to be the only few weeks where the restaurant is open on weekends, so if you're looking to try it out, be sure to make your reservations early.)

This review is strictly on the baked goods and pastries and not on the restaurant food. I ordered the black forest, mille fueille and a berry danish to go. The total came up to around $19-20.The black forest was definitely on the sweeter side. The cherries on the inside are soaked in alcohol which I liked as it is a black forest. The cake itself wasn't too dry but I felt like there was too much mousse and it was just too sweet for me personally.The mille fueille was definitely the best out of the three desserts. The layers of puff pastry was nice and crispy and light. Very buttery. The diplomat cream wasn't too sweet and was well balanced.Berry danish was the biggest disappointment out of the three. It was not crispy at all, almost to the point where it was tough. It wasn't flaky and pretty disappointing.Overall the items were pretty disappointing especially for the price. I did love the decor and this would probably be a great place to chill and catch up with friends but not for the good but for the ambiance.

Had a very decadent, rich hot chocolate as part of this year’s hot chocolate festival - delicious but perhaps a little too much cream for my liking and also rather pricey! However, I would like to come back and try the tasty looking bakery items soon :)
