Pilot Coffee Roasters
Probably equivalent to second cup or any other run of the mill café. Not a very friendly or particularly passionate establishment. For a place that roasts their coffee a few meters away from their front of house, its strange that they would only offer one rotating espresso brew. Cookies and baked goods are also pushing $4 which is nearly double competing cafes.

Finally open in downtown Oakville! I always enjoy their coffees as they have good quality beans and extract the best cup from them.Enjoyed a long black and can’t wait to try the other beverages and snacks.There is good indoor seating as well. Service was friendly and cafe is clean.

The staff at Pilot Roasters go above and beyond to ensure their customers are satisfied. I have celiac disease and always feel safe getting my coffee made by them! A special shout out to Mar and Lu who always ensure my drink is not cross contaminated (also to the other staff members whose names I do not know).Additionally, I’ve noticed that they are very inclusive in the language that they use when speaking about customers.Their coffee is the best in Oakville!

Stylish and clean coffee shop with tasty coffee and helpful staff. Only had a shot of espresso this time. They also had a good selection of pastries, we’ll have go back to try someI went back and tried an earl gray scone, it was just OK. Wouldn’t recommend the scone.

The coffee is fantastic, flat white for me, but the ambiance leaves much to be desired. Comparing to Tribeca, you don’t feel the “community” or “local” style vibe, which is disappointing.I see a lot of comments about the lack of service, but I think those comments are from people who want fake niceties or don’t start the conversation on the right foot. I’ve always said a genuine hello l, with eye contact or good morning and they have been nothing but lovely with me.One star deducted for the lack of ambiance

Top quality coffee! Clean and spacious inside plus the staff are friendly. Their baked goods are also delicious! Great spot in Oakville, limited street parking out front. Definitely recommend!

In short, best espresso in Oakville. Their coffee workflow is solid- weigh the dose, level, then tamp (a mechanical tamp, but, it brings consistency). I’ve seen them request a new pull on shots, so they are mindful of their cup quality. They also have strong shots, and dose heavier than other cafes in town. They have top notch equipment, and sunken machines, so it creates a more open feel. Staff are super friendly once you get to know them. Seating is a mix of tables and stool counters. Where they fall short is ambiance - It doesn’t feel cozy, and the place often runs cold. It's a minimalist vibe, Walls are mostly unadorned.
