Fantastic service and such an interesting menu. I appreciate that the ingredients are locally produced or foraged and always seasonal which makes this restaurant sustainable. I liked that they had a juice pairing with the tasting, it was a great option for people abstaining for alcohol. It was expensive but worth it for special occasions - we all left feeling stuffed to the brim!

Very exciting and cool experience. I chose the vegetarian 7 course & the wine pairing. I highly recommend doing the wine pairing, they were extremely spot on with each of the dishes and will make your experience even better at Sauvage. Each dish was beautifully curated, the distinct flavours offered with each dish something you will never find at other restaurants. The chef has out done themselves. I highly recommend coming here. The servers are very knowledgeable and explain each offering as well. Come with an empty stomache because you will get full super fast!

Absolute gem found in Canmore.Went here for brunch and afternoon tea, they only recently opened this service so get in while it's still quiet, it won't be for long.Amazing atmosphere, top tier service and good that is more than delectable.Eagerly waiting for my next trip down here and trying out the dinner menu.

One of the best dining experiences I’ve had in recent years! The vibe, the philosophy of foraging and sustainability, the food - it all just works. We enjoyed the 7-course Hunter menu and it was so well thought out, composed, super delicious and filling. Maria was our server - she is very attentive, knowledgeable and absolutely delightful! Sauvage also made sure to acommodate our dietary restrictions which was very much appreciated. It was all amazing - thank you so much!

I’ve always wanted to try a place like this! I looked forward to it after a few friends recommended that we dine here. We made reservations and I notified in advance of my wife’s allergies, which they were great about and made the proper changes.We decided to go all out and do the 7 course Hunter menu. WOW! It was phenomenal! I don’t even know what half the stuff was but it was delicious. The presentation was seriously out of this world. These chefs know exactly what they’re doing.The cocktail I ordered was probably the best I’ve ever had. I let my server know that I’m a gin drinker and he recommended the perfect one.Next time I think I’ll try the 5 course menu with the wine pairing. 7 was a bit too much for my wife, so I had to eat her dessert. Not that I’m complaining about that!I highly recommend trying this place! The staff are extremely knowledgeable and will go above and beyond to make sure you have the ultimate experience. The atmosphere was also very relaxing and beautiful.

One of the best dining experiences by far!Everything in the plate was so fresh and the chef really put lots of thoughts on how to put together a course!Service is a bit awkward but they explained every course nicely.Try the juice paring, it’s so worth it!

I have been eating food for 34 years and this is a place I just have to tell the world about! I have never had such a flavoursome Full English breakfast in my life and my tastebuds are still dancing from it.The black pudding has texture, complexity, flavour and none of the irony unpleasantness you sometimes get from blood pudding. The hint of rosemary on the potatoes is a stroke of genius, and I loved the vinegary hit from the beet ketchup—and I don’t even like beets.Run, don’t walk, to Sauvage if you ever have the pleasure of being in this adorable town. What even is Banff?

We had a 5 course dinner. Excellent food that is unusual enough to keep things interesting. A great spot for a special occasion.
