We've had dinner at the Bison on multiple occasions. Excellent food and service every time! Highly recommend the bison ribeye. The restaurant offers many regional wines including Burrowing Owl (Okanagan) which we've quite enjoyed.

After looking at the reviews and checking their website as a top rated restaurant we decided to give this restaurant a try. The atmosphere was okay and i could see the patio being very nice during dinner for panorama views. Ordered some appetizers including the beef tartar, fire roasted octopus, and bison tomahawk. The bison tomahawk was filling but lacked flavor and seasoning (also came out lukewarm). The only dish I enjoyed was the octopus based on flavor out of all the dishes. Prices are higher than most restaurants.

THE BUTTER RICE. I could end my review here and that’s enough to get you to get a reservation at The Bison.The menu is so unique, you will not find most of the items anywhere else nearby. Most of the food is locally sourced, they even show you a map of their partners on the menu.The Aloha Chicken was by far worth it. Just imagine a Canadian exchange student getting invited to a college frat luau in Hawaii, except everyone is fancy. That is your experience.The atmosphere and service was AWESOME. Our server was super authentic and did not act like she hated her life. (I know, the bar is high). She was very personable and knowledgeable about the menu!They even offer blankets on the patio if it’s chilly! It’s like eating at your wealthy stepmother’s summer home.

The texture of bison short rib itself was dry. A bit disappointing, we ended up couldn’t finish it cuz the meat was either over cooked or just simply dry.The bolognese could have more sauce cuz the bucatini was quite thick like Udon while the sauce couldn’t hang" on the pasta."

First time in Banff, and it was a special occasion to celebrate my partner's birthday as well as on a vacation.I was aware this restaurant is not cheap to dine in, and my expectation was high after reading so many travel blogs that mentioning this place and the reviews.Well, the experience here just exceeded the hype we had coming in!The feature meal with Bison steak was perfectly seasoned and cooked, and the source it came with was delicious by itselves. I had a red wine from Black Sage Vinery to go with the meal. I loved how they mention the suppliers of their food ingredients and wine on map on their menu.The meal definitely worth the price.My partner was over the moon after the meal, and it was just amazing night we had here.

We loved the food, drinks, and service so much we came back the next day for dinner. We ordered the fried chicken, the bison short rib, apple pie, and all their drinks were honestly great. The one pictured is their seasonal drink “chocolate kiss.” PLEASE get the fried chicken, it blew our minds. The meat is juicy, and even though it’s fried, it wasn’t greasy at all. It comes with a cilantro sauce which pairs nicely with the chicken. The bison short rib just melts in your mouth. I don’t even like apples but I LOVE their apple pie. Next time I’m visiting Banff, I will definitely make my way back to The Bison.

We went to the Bison for an early supper before an evening ice walk in Johnson Canyon. Kyle is an excellent server and gave us info on the local spots to see and told us more about the wine from the Okanagan winery that we were drinking that evening. The menu is sourced locally and is thoughtfully curated.We had the 24 hour beef and the Duck with fat rice. Both dishes were incredible. If you like beef, do yourself a favor and get that dish. It was incredible. The duck was very tasty, with a mix of duck breast and shredded, crispy duck leg.The only thing we were sad about was not being able to stay longer and have a leisurely dessert as we had to get to our tour. Thank you!

We ordered the Tomahawk steak, medium rare. It's been sliced when served (this is good), however, some pieces are sinewy with connective tissue. The taste and flavor are good, it's just hard to chew.Also ordered the beef tartare. This tastes tender and fresh, we enjoyed this dish.

Was able to get last minute reservations for 2 - and I’m so glad we did! Amazing service. Wonderful food. Beautiful ambiance.Had the bison short rib and Alberta steak - both were fantastic.

What a fantastic dinner after a long day exploring Banff National Park. Hugo took care of us and was exceptional by all standards. We got the octopus and burrata to begin, both were phenomenal. We got the duck and brisket as mains. Really enjoyed the duck with the fat rice. The brisket was tender, delicious and perfectly seasoned. Ended the meal with the strawberries and cream dessert, which was as delicious as all the other offerings of this fantastic restaurant. Considering canceling our dinner reservation for tomorrow night to come here again.
